Is it possible with the ANZ Platinum frequent flyers card i could get two amex's instead of one visa and one amex?

I don't think so, but you should contact ANZ to be sure.
You may be able to get a secondary set of cards (i.e. an extra Amex and Visa).
Besides, it can be helpful to have a backup card such as a Visa as American Express is not always accepted.
